Spicy Chipotle Pasta with Honey Soy Chicken // Easy One Hour Meal

This is a perfect weeknight dinner that’s very easy to make, healthy, colorful, and full of flavor.  With over 6 cups of veggies, this creamy pasta recipe has bell peppers, onion, peas, herbs, and tender chicken in a spicy chipotle sauce.

Spicy chipotle pasta with honey soy chicken is one of my favorite dishes to eat — it’s a copycat version of the Cheesecake Factory’s Spicy Chicken Chipotle Pasta, but even better!  It only takes less than an hour to make a huge pan.

The creamy and spicy chipotle sauce is made with two simple ingredients — cream and chipotle peppers in adobo sauce.  These are the Goya and La Costeña brands before and recommend. This homemade sauce is very spicy.  To reduce the spice level, you can use 1-2 less chipotle peppers.  I like to add a lot of cilantro because it slightly dampens the heat while enhancing the chipotle flavor.  Note that cilantro can also be substituted with parsley.

I like my chipotle sauce extra spicy but if you prefer less heat, use 1 or 2 less chipotle peppers.

The honey soy chicken adds tons of juicy flavor and is a lovely compliment to the spice in this dish.  I marinate chicken thighs in soy sauce, dark soy sauce, garlic, and honey.  Then I place it in an air fryer lined with foil to cook the chicken perfectly.

Honey soy chicken is a great complement to any pastas or with rice. I use this air fryer to cook it perfectly.

Spicy Chipotle Pasta with Honey Soy Chicken

Spicy chipotle pasta with honey soy chicken is one of my all time favorite pastas.  It’s creamy, spicy, colorful and full of flavor.  It’s also very simple and easy to make!  It’s always a big hit at home and at parties.  The restaurant version just doesn’t compare to this delicious homemade version.

Ingredients

Spicy Chipotle Pasta

  • 7 oz can chipotles in adobo sauce
  • 1 ½ cups heavy cream
  • 1 red bell pepper diced (about 2 cups)
  • 1 green bell pepper diced (about 2 cups)
  • 1 red onion sliced (about 2 cups)
  • ½ bunch cilantro chopped (about ½ cup)
  • 1 cup frozen peas
  • 5 cloves garlic minced (about 2 tbsp)
  • 1 lb penne pasta
  • 2 tbsp olive oil
  • 1/4 tsp salt

Honey Soy Chicken

  • 2.5 lbs boneless skinless chicken thighs
  • 2.5 tbsp soy sauce
  • 2 tbsp dark soy sauce
  • 1 tsp garlic powder
  • 2 tbsp honey

Instructions

Honey Soy Chicken

  • Combine all the ingredients together and marinate overnight or for at least 30 mins.
  • Preheat your air fryer to 380° (mine takes 3 minutes to preheat).
  • Line the airfryer with foil and place chicken into the air fryer.  Do not overcrowd to ensure that air flows properly.
  • Cook at 380° for 15 minutes, flipping halfway or until the internal temperature reads 165 degrees. Every air fryer is different, so cook times may vary.

Spicy Chipotle Pasta

  • Cook pasta according to directions and set aside.
  • Purée chipotle peppers and adobo sauce with a blender or food processor, or chop finely with a knife. 
  • Add chipotle purée to a sauce pan and heat up on medium high for 1 minute.
  • Add heavy cream and ¼ tsp of salt. Stir to combine.
  • Bring it to a light boil for 5 minutes, stir occasionally. Set aside.
  • Heat 2 tbsp of oil in a large pan or wok on medium high heat.
  • Add garlic and sauté for 30 seconds.
  • Add onion and sauté for 3 minutes.
  • Add bell peppers and cook for 4 minutes.
  • Add pasta, chipotle sauce, and peas and stir to combine.
  • Turn off the heat and add sliced honey soy chicken and cilantro. Mix well and serve!
