Decadent Berry Croissant Bake // Effortless Mother’s Day Brunch Dish

Mother’s Day is less than a week away!  Every year, I like to treat myself and my family to a special dish.  This Berry Croissant Bake is a delicious overnight breakfast dish that my family loves.  It combines buttery croissants, cream cheese, milk, eggs, vanilla, and berries to create a beautiful and delicious breakfast treat.

Everything is combined in a casserole dish and baked until the top is lightly crisped and buttery. It has a soft and custardy filling with bursts of juicy berries throughout.  The texture is similar to bread pudding and tastes like a fruit topped cheese danish.  I like to lightly dust powdered sugar on top to make it even more aesthetically pleasing.

This super easy recipe only takes about 10 minutes to prepare and 35 minutes to bake.  It can be fully assembled the night before and baked in the morning.  If you prefer to serve it the same day, just let it sit for 30 minutes before baking to allow the croissants to soak up the sweet custard.

Buttery and flaky croissants work best to soak up the sweet custard without getting soggy.  I like to pick up fresh croissants from the local bakery or supermarket.  If you don’t have croissants, you can use challah bread or day old french bread.

Fresh or frozen berries add a delicious tartness in contrast to the richness of the custard and croissants.  I like to keep a bag of frozen mixed berries in the freezer to use because it’s super easy and convenient year round.

Berry Croissant Bake

Ingredients

  • 6 cups of croissants, cut into 1 inch cubes (4 large croissants)
  • 1 cup fresh or frozen berries
  • 1 (8 ounce) package cream cheese, softened
  • 2/3 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3/4 cup milk
  • 1 tablespoon of powdered sugar (optional)

Directions

  1. Add croissants to a 9”x9” or 8”x11” baking dish.
  2. Add berries evenly over croissants and aside.
  3. In a separate bowl, beat cream cheese for 30 seconds with a mixer.  Gradually add in sugar, eggs, vanilla, and milk.  Continue to mix until well blended.
  4. Pour cream cheese mixture over croissants and berries.
  5. Let rest for at least 30 minutes or refrigerate overnight.
  6. Preheat the oven to 350 degrees.
  7. Bake for 35-40 minutes or until golden brown and set in the center.
  8. Serve warm with powdered sugar sprinkled on top.
