Enjoying our homemade cocktail for Date Night – Leopard Cardigan, Small

Like most parents, finding time for date nights can be difficult for us – if our schedule isn’t booked with work/activities for the kids/weekend events, we still need to find a babysitter for our two young kids.  Sometimes, our laziness gets the best of us and we’d rather trade a night out for a night in of movies and sleep.

Earlier this year, my husband and I decided to make weekly date nights a priority to make sure we regularly reconnect and have some fun together. My husband is usually a beer and wine drinker, but one week we made homemade cocktails to enjoy together – and he loved it! We had so much fun, we started doing it every week, and Thirsty Thursdays were born.

Every Thursday we make a different cocktail that lets us try different liquors, taste different flavor combinations, and learn different mixing techniques. The best part is that we get to spend time together discovering something new and we’re rewarded with a delicious finished product. We look forward to it every week! Below is a recipe for an experimental cocktail we came up with, which was inspired by our trip in Banff, Canada.

Spicy Coconut Margarita

Recipe serves 2

Ingredients

  • 2 shots tequila
  • 1 shot triple sec
  • 1 cup coconut milk
  • Juice of 1 Lime
  • 4 cups of ice
  • 1 jalapeño (sliced)
  • ¼ cup sugar
  • ¼ cup water
  • Sugar or salt for rimming (I’m using lava salt)
  • Lime slice for garnish

Directions

  1. Create a jalapeño simple syrup by combining the jalapeño, sugar, and water in a small saucepan and bring to a boil.  Stir until the sugar is dissolved.
  2. Remove the saucepan from the heat and set aside until cooled completely and discard the jalapeño.
  3. In a pitcher, combine the ice, tequila, triple sec, coconut milk, lime juice, and jalapeño simple syrup and stir until mixed through.
  4. Wet the rim of the two glasses with a lime wedge then dip the rim into sugar or salt.
  5. Pour margarita into glasses and garnish with lime.
  6. Enjoy!

Peach Bourbon Thyme Smash – Great and refreshing combination of flavors. I preferred using regular simple syrup over the jalapeño simple syrup.

Grapefruit Cosmo I added a frozen grapefruit rose by freezing grapefruit juice in this mold.

Strawberry Mango Margarita – Such a yummy drink and a great way to get your fruits in.

Rose Popsicle – A super simple and easy summer favorite.

Italian Mule – A nice spin on the traditional Moscow mule and a wonderful reminder of our time in Italy.

Pear Haymaker – A perfect fall drink.
